  1. Preparation
    • Collection: Raw cashews are hand-picked from cashew apples that fall to the ground
    • Sun-drying: Nuts are dried for 2-3 days to reduce moisture content from 12-16% down to 8% to prevent mold formation
    • Storage: Dried nuts are stored in warehouses for 6-12 months before processing
    • Calibration and cleaning: Nuts are sorted by size (18mm, 20mm, 22mm, 24mm) and foreign matter is removed
    • Heat treatment: Steam-boiling to weaken the tough shell before de-shelling
  2. Shelling (Shell Removal and Separation)
    • Breaking and removing the outer shell/husk without splitting the kernel inside
    • Uses automatic machines to avoid worker exposure to caustic Cashew Nut Shell Liquid (CNSL)
  3. Peeling (Removal of Testa)

  • Traceable/organic: These cashews come from farms directly enrolled in our partnership program. Every plantation is digitally mapped in our tracking system, allowing us to trace each nut back to its exact source farm. This represents our gold standard for accountability and quality assurance.
  • Conventional Simple: While we purchase directly from individual farmers, some aren't yet part of our formal enrollment program. Though their plantations aren't digitally mapped, we maintain complete transparency by knowing exactly which farmers we work with and which specific farms supply our cashews.   • Conventional: In rare circumstances, usually due to challenges such as severe weather, government policies, or market disruptions, we source a small portion of our cashews (less than 10%) from third-party suppliers.
